Quick tomato pizza sauce
A small saucepan and a few pantry ingredients are all you need for a smooth pizza sauce. Keep it thick enough to spread in a thin layer so the dough can bake without becoming soggy.

Ace Sabbah does the work of a much longer reduction. Water opens up the paste, while oregano and garlic give it the familiar flavour of a good pizza base.

- Makes about 300 ml; enough for 3 medium pizzas
Times are approximate. 1 tbsp = 15 ml; 1 tsp = 5 ml. Oven temperatures are for a conventional oven.
Ingredients
1 tbsp olive oil
2 garlic cloves, finely minced
6 tbsp Ace Sabbah double-concentrated tomato paste
250 ml water
1 tsp dried oregano
½ tsp fine salt, or to taste
¼ tsp black pepper
½ tsp sugar, optional if needed to balance acidity
Method
Warm the garlic
Heat the oil in a small saucepan over medium-low heat. Add the garlic and stir for 30 seconds without letting it brown.
Cook the paste
Add the tomato paste and stir for 2 minutes until slightly darker.
Simmer
Whisk in the water, oregano, salt and pepper. Simmer uncovered for 7–8 minutes, stirring, until thick enough to spread. Add a splash of water if it becomes too stiff.
Cool and use
Taste and add the optional sugar only if needed. Let the sauce cool before spreading roughly 100 ml over each medium pizza base. Top and bake according to your dough recipe.
At the stove
This recipe makes the sauce only. Use a thin layer on the dough; extra sauce can make the centre wet.
At the table
Use for homemade pizza, flatbread pizza or a warm dipping sauce.
