Rice & lentil stuffed peppers
These peppers are filled with rice, lentils and a spiced tomato mixture, then baked until tender. They are substantial enough for dinner and easy to serve as neat individual portions.

Times are approximate. 1 tbsp = 15 ml; 1 tsp = 5 ml. Oven temperatures are for a conventional oven.
Ingredients
4 large bell peppers, halved lengthways and deseeded
2 tbsp olive oil
1 onion, finely diced
2 garlic cloves, minced
4 tbsp Ace Sabbah double-concentrated tomato paste, divided
1 tsp ground cumin
250 g cooked rice
1 × 400 g can lentils, drained and rinsed
2 tbsp chopped parsley
400 ml low-sodium vegetable stock, divided
¾ tsp fine salt
¼ tsp black pepper
80 g feta, crumbled
Method
Prepare the peppers
Heat a conventional oven to 200°C / 400°F. Arrange the pepper halves cut-side up in a large baking dish.
Make the filling
Warm the oil in a pan. Soften the onion for 6 minutes; add garlic and cumin for 30 seconds. Cook 3 tbsp paste for 2 minutes. Stir in rice, lentils, parsley, 100 ml stock, salt and pepper; heat for 2 minutes.
Fill and cover
Divide the filling among the peppers. Mix the remaining 1 tbsp paste with the remaining 300 ml stock and pour around the peppers. Cover the dish tightly with foil.
Bake
Bake for 30 minutes. Remove the foil, add the feta and bake for 10–15 minutes more, until the peppers are tender and the filling reaches 74°C. Spoon the pan sauce over to serve.
At the stove
Use freshly cooked rice or properly refrigerated cooked rice. Large pepper halves may need an extra few minutes in the oven.
At the table
Serve two halves per person with a simple cucumber salad.
